Stuffed Pork Chops

1/2 lb pork chops

2 carrots, grated

2 celery stalks, chopped

1/2 small onion, chopped

3 small cloves garlic, minced

1/4 lb mushrooms, thinly sliced

1 cup bread crumbs

1/2 tbs dried sage

2 tsp dried parsley

2 tsp basil

2 tsp Italian rosemary blend

2 tsp ground oregano

1 tsp salt

1 tsp pepper

3/4 cup grated Parmesan/Romano (the kind in the green can works just fine)

1 egg

1 tsp olive oil

  1. Mix everything but the pork chops in a bowl, spices first, then egg and olive oil.
  2. Butterfly the pork chops.
  3. If baking, preheat the oven to 350 degrees. If grilling, preheat pan on high.
  4. Stuff pork chops with mixture, use toothpicks soaked in water to hold together.
  5. Bake for approximately 45 minutes- 1 hour, depending on thickness and color during bake time OR grill for approximately 15 minutes, flipping approximately twice, until done.
