Pot Roast

2-4 lb roast

3 red potatoes, chopped

1/2 onion, chopped fine

4 carrots, chopped

4 garlic cloves, halved

1 can cream of mushroom soup

salt and pepper

  1. Make sure the roast is thawed, if it isn’t fresh. Rub salt and pepper onto the meat. Sear it on all the sides to lock in the flavor. Cut slits, at least two per side, into the meat. Put a piece of garlic into each slit.
  2. Add the meat into the crockpot. Put the chopped onion, potatoes and carrot on top of and around the meat. Add the can of soup, then a can and a half worth of water.
  3. Turn the crockpot on low and cook for 8-9 hours.
